For millennia a symbol for Italian excellence, olive oil has found lately scientific proof of its exceptional qualities.
For our dishes we use an extra-virgin olive oil made by a small grower whose life is marked by the rhythm of his olive grove.
Being cold-pressed using only mechanical proceduresand the very low average acidity (almost 0,2%) make it extra-virgin. Produced from one cultivar called Caninoin the area of Viterbo, an area known for its olive oil making due to rigid weather and soil humidity that constitute as natural barriers against parasites too. For these reasons, this oil is certified organic.
Fruity and well-balanced initially it leaves a dosed combination of spicy bitterness on the finish. A real concentrate of protective substances for our body.

Universally valued, in the past even used as a relief when famines struck, durum wheat pasta remains an extraordinary vehicle for flavors and a support for individual creativity.
For our pasta we’ve chosen rigatoni made in an old pasta factory from Abruzzi (L’Aquila), ancient land of tradition for pasta makers.
Here, the purest of water, the bronze die and slow drying guarantee a rich, genuine and tasty product. Nevertheless, what makes this pasta a culinary excellence is the knowledge of the pasta makers that control all phases of production, adjusting when necessary. Being a handcrafted product, the yield is not always the same.

Although originating from central America, the tomato is today the most planted and consumed vegetable in Italy. A reason of its success is being compatible with lots of foods, therefore is an ingredient in countless recipes. Considering the vast number of varieties one can use any tomato for each purpose.
For our dishes we’ve selected the organic San Marzano variety, cultivated Tuscany (Livorno). Hand picking allows to choose only the bright and shiny red colored tomatoes with the meaty, compact pulp. Not long after picking, the tomatoes are cooked only briefly as to maintain aromas and taste.
