Although originating from central America, the tomato is today the most planted and consumed vegetable in Italy. A reason of its success is being compatible with lots of foods, therefore is an ingredient in countless recipes. Considering the vast number of varieties one can use any tomato for each purpose.
For our dishes we’ve selected the organic San Marzano variety, cultivated Tuscany (Livorno). Hand picking allows to choose only the bright and shiny red colored tomatoes with the meaty, compact pulp. Not long after picking, the tomatoes are cooked only briefly as to maintain aromas and taste.
